Ingredients:
- 1 raw egg yolk (free range is provides best results).
- 1/2 cup avocado oil or light olive oil.
- 1 Tbs fresh lemon juice.
- 1tsp water.
- Pinch of sea salt.
Directions:
- Before you start, make sure all the ingredients are at room temperature.
- Put the egg yolks in a food processor or blender. Sprinkle with salt and add water.
- Start blending while slowly adding the oil.
- After the mayo has thickened, add lemon juice and gently mix with a spoon.
- Add flavour enhancer of choice (optional)

Add a minced clove of garlic to make Aioli
Add Paprika for a tasty egg salad dressing (very yummy mixed with hardboiled eggs and spread on Rice Cakes)
