Chicken & Bacon Cauliflower Stirfry

Ingredients:

  • 1 onion, diced
  • 2 cloves garlic, crushed
  • 1 small capsicum, chopped
  • 1 head broccoli, in small florets
  • 1 small head cauliflower
  • 500grams chicken breast, cut into thin strips
  • 2 rashers shortcut bacon
  • any veggies you want!
  • 1 tsp Tamari sauce
  • 1 tsp dried parsley
  • 2 tsp curry powder
  • 1 tbs homemade vegetable stock
  • 1/2 cup coconut cream
  • 1/2 cup water

Method:

Add roughly chopped cauliflower to a food processor and pulse/turbo/blitz until it resembles “rice”.

Sauté onion and garlic in 1 tbs macadamia or coconut oil until soft.

Add chicken and bacon and stir regularly until browned.

Add other veggies and stir through.

Add remaining ingredients and simmer until cooked through, stirring occasionally.
