Ingredients:
- 500g chicken breast/thigh fillets
- 2-3 rasher shortcut bacon
- 1 box Spelt or Pulse Pasta
- 2 cups of green beans, trimmed and washed
- 50g Cashews
- 50g Macadamias
- ½ tbs Vegetable Stock Concentrate
- 250mls water
Method:
- Preheat oven to 180 degrees.
- Line a large baking dish with baking paper.
- Cut up chicken and bacon into small pieces.
- Add chicken, bacon and beans to baking dish.
- To make sauce, add cashews, macadamias, water and vegetable stock to a blender and blend until smooth.
- Pour over chicken dish.
- Place in oven and bake for 35-45 minutes or until chicken is cooked through.
- While chicken is cooking, cook pasta as per instructions.
- Remove chicken and stir through pasta.
Makes 4-5 serves.
