Ingredients:
- 1 medium brown onion
- 1 garlic clove
- Tbs Macadamia Oil
- 500g cauliflower
- Tbs of vegetable stock concentrate
- 300mL water
Directions:
- Use a food processor to chop onion and garlic. Add to saucepan with oil. Cook until softened.
- Use a food processor to chop cauliflower into very small pieces.
- Add stock concentrate, water and chopped cauliflower to the pan. Cook for approximately 20 minutes, stirring occasionally, until all ingredients have softened.
- Allow to cool, return mixture to food processor and blitz at high speed to blend together. Blitz until desired consistency is achieved.
**optional: For a cheesy alternative, add 40g of shredded parmesan cheese during step 3.
