Slow Cooker Vegetable Lentil Pasta Soup

Ingredients:

  • One packet San Remo Lentil Pulse Pasta
  • 2 Tbs Nutra Organics Chicken Bone Broth Powder
  • 4 cups diced pumpkin
  • 2 small zucchinis, diced
  • 1 medium carrot, sliced
  • 1 can crushed tomatoes
  • 1 tbs tamari sauce
  • 1 medium onion, finely diced
  • 5 cloves garlic, crushed
  • 1/2 tsp cumin
  • 1 tsp turmeric
  • 2 cups white potatoes
  • 5 cups filtered water

Method:

Add all ingredients except pasta to slow cooker.  Cook on low for 6-8 hours.  Cook pasta, as per packet direction.  Add to slow cooker to combine and serve.

Makes 10 serves.

Macros per serve: 169 calories, Protein 10.2g, Fat 1.1g, Carbs 27.4g

Note:  add shredded chicken for added protein.
