Thai Green Curry “Meal Prep”

Ingredients:

  • 2kgs diced chicken breast
  • 2 heaped dessert spoons Thai Green Curry Paste
  • 1 tin Ayam 270ml coconut m ilk
  • 1 tbs homemade vegetable stock concentrate
  • 1 red capsicum, cut into strips
  • 1 onion, chopped
  • 1-3 garlic cloves, finely diced
  • spinach, however much you want!

Method:

Place chicken breast, onion and spinach leaves in baking dish. In a bowl, combine all other ingredients for sauce and pour over chicken. Stir through.

Bake for 35-40 minutes, or until cooked.

Serve with brown rice, basmati rice or baked sweet potato.
