Turkey Mince “Meal Prep”

This is a great recipe to make 15 meals in a short time!  Great for those freezer lunches or dinners when you are busy!

Ingredients:

  • 2 kgs turkey mince
  • 2 cans crushed tomatos
  • 1 can red kidney beans, rinsed and drained
  • 1 onion
  • 3 cloves garlic
  • 2 zucchinis
  • 1/2 red capsicum
  • 4 large handfuls of spinach
  • 2 tbs tomato paste
  • 2 tbs homemade vegetable stock
  • 2 tsp cumin powder
  • 2 tsp paprika
  • 2 tsp Italian herbs

Method:

Chop onions, garlic & vegetables.

Heat 1 Tbs macadamia oil in a large pan or saucepan.

Add chopped vegetables to pan and add spices. Stir until softened and fragrant.

Add mince and cook until browned.

Add remaining ingredients and simmer for 15-20minutes.

Stir through 150g cooked brown rice to the mince to complete your meal.

Add a 1/4-1/2 avocado upon serving for a dose of healthy fats.
