Ingredients:
- 400g turkey mince
- 2 small sweet potatoes
- 1/2 red capsicum
- 1 small carrot
- 1 zucchini
- 1 onion
- 1/4 cup coconut cream
- 3 eggs
- salt & pepper, to taste
Method:
Preheat oven to 180 degrees.
Brown turkey mince in fry pan. Once browned, add small diced sweet potato. Stir regularly.
Finely dice, chop or grate vegetables (I used a food processor)
Add whisked eggs and coconut cream to vegetables and stir through.
Add mince and sweet potato to egg mixture and combine.
Pour into a lined tray/dish and bake in oven until cooked through.
